The passion for the sea and, in particular, for the Ria Formosa, in Algarve, led Paulo Gray to change the bank for the investment in the creation of a company that produces oysters of the gigas’ species together with a partner. Today, he is the owner.
Located next to Faro beach, Aqua Prime Oysters, a company created in 2013, passed, two years later, into the hands of Paulo Gray. Since then, Paulo has been reinforcing its commitment to modernization in what concerns the production of special oysters, this time limiting this activity to the rotating basket system called the Australian system. With this process, “the baskets have a natural movement, that is, they are made under the influence of the wind and the tides”, he explains. The aim is to “improve the quality of the product”.
France is the destination of these oysters in the export plan of Aqua Prime Oysters, "but we also sell to companies that sell to the great chefs", adds Paulo Gray. Annual production ranges from 15 to 20 tons.
In addition to Aqua Prime Oysters, in 2011, Paulo Gray acquired the property belonging to the centenary Sociedade Piscicultora Farense, located in Ria Formosa - a cove that extends between Loulé and Vila Real de Santo António -, next to the Canal do Ramalhete. Here, production is limited to the production of sea bream.
