The relationship of Tiago Fonseca with the sea is not new. For some time he was a surf clothing distributor, with his own shop in Peniche. But ten years ago he changed the boards for the fish. He started working directly with fishermen and shellfish farmers, buying fish and supplying retailers and restaurants. In 2015, it became a must in high gastronomy: joined Joel Martins, from the famous Tasca do Joel, an icon of the local restaurant, and together they opened the Ocean Tour, a company whose goal is to bring the best products of the sea to the best chefs. "We realized that the chefs did not have easy access to the good product, there were too many intermediaries, the fish and the seafood were too slow to arrive," he explains. It is in the fish market of Peniche that much of the action takes place. "I do not have a fixed supply of fish for my clients, I'll tell them what's good." And Tiago knows what's good because he dominates the market, the boats that have unloaded, the ones that are unloaded and what they bring. At the market he’s on its heaven, he knows exactly what to bid for and when to do it. All respecting its motto: "Top product at affordable price."
